  • 8 pork chops
  • Seasoning with salt and pepper
  • 2 tablespoons (30ml) of SPAR olive oil
  • 2 tablespoons (30ml) of Harissa paste
  • Grated zest and juice from one fresh lemon

Blueberry Chutney (Yields one cup)

  • ½ cup (125 ml) of red wine vinegar
  • ½ cup (125 ml) of SPAR sugar
  • 1 medium onion, finely diced
  • 1 teaspoon (5 ml) of freshly minced ginger
  • 1 teaspoon (5 ml) of ground cinnamon
  • Grated zest of one lemon
  • A small pinch each of cayenne pepper and salt
  • 3 cups of blueberries (can use either fresh or frozen)

Recipe Method

Pork Chops:

  1. Combine the olive oil, Harissa paste, and lemon (zest and juice) in a bowl. Thoroughly rub this mixture over the pork chops. Season the chops with salt and pepper to taste.
  2. Heat a non-stick skillet or a grill (braai) to high heat. Cook the pork chops for about 6 minutes on each side, or until they're thoroughly cooked.
  3. Serve the pork chops with a hearty spoonful of the blueberry chutney, accompanied by a fresh salad.

Blueberry Chutney:

  1. In a medium saucepan, mix the red wine vinegar, sugar, diced onion, ginger, cinnamon, lemon zest, cayenne pepper, and a pinch of salt. Bring this mixture to a boil, then lower the heat, and let it simmer for 15 minutes.
  2. Stir in 1 cup of blueberries and continue to simmer for another 20 minutes, stirring occasionally.
  3. Add the remaining blueberries and simmer for an additional 10 minutes.
