Pork Chops with Homemade Blueberry Chutney Recipe
Juicy pork chops paired with sweet-tart blueberry chutney, a delightful flavor fusion.
Recipe Ingredients
- 8 pork chops
- Seasoning with salt and pepper
- 2 tablespoons (30ml) of SPAR olive oil
- 2 tablespoons (30ml) of Harissa paste
- Grated zest and juice from one fresh lemon
Blueberry Chutney (Yields one cup)
- ½ cup (125 ml) of red wine vinegar
- ½ cup (125 ml) of SPAR sugar
- 1 medium onion, finely diced
- 1 teaspoon (5 ml) of freshly minced ginger
- 1 teaspoon (5 ml) of ground cinnamon
- Grated zest of one lemon
- A small pinch each of cayenne pepper and salt
- 3 cups of blueberries (can use either fresh or frozen)
Recipe Method
Pork Chops:
- Combine the olive oil, Harissa paste, and lemon (zest and juice) in a bowl. Thoroughly rub this mixture over the pork chops. Season the chops with salt and pepper to taste.
- Heat a non-stick skillet or a grill (braai) to high heat. Cook the pork chops for about 6 minutes on each side, or until they're thoroughly cooked.
- Serve the pork chops with a hearty spoonful of the blueberry chutney, accompanied by a fresh salad.
Blueberry Chutney:
- In a medium saucepan, mix the red wine vinegar, sugar, diced onion, ginger, cinnamon, lemon zest, cayenne pepper, and a pinch of salt. Bring this mixture to a boil, then lower the heat, and let it simmer for 15 minutes.
- Stir in 1 cup of blueberries and continue to simmer for another 20 minutes, stirring occasionally.
- Add the remaining blueberries and simmer for an additional 10 minutes.
