Hearty Oxtail Stew Recipe
This rich oxtail stew simmers on the stovetop, not in the oven, so can be made over gas during loadshedding. Ideal for weekend meals when you have some downtime to spend in the kitchen.
Recipe Ingredients
- 2 kg SPAR Select oxtail
- 80 ml SPAR cake flour
- Salt and pepper, to taste
- 45 ml SPAR vegetable oil
- 1 large SPAR Freshline onion, peeled and chopped
- 3 SPAR Freshline garlic cloves, peeled and minced
- 20 ml Worcestershire sauce
- 4 bay leaves
- 10 ml ground cumin
- 15 ml ground coriander
- 2 cinnamon sticks
- Pinch of ground cinnamon
- 125 ml red wine
- 1.5 litres SPAR beef stock
- 5 SPAR Freshline potatoes, peeled and cut into chunks or SPAR Freshline ready chopped sweet potato cubes
- 4 SPAR Freshline carrots, peeled and cut into chunks
- Chopped SPAR Freshline parsley, for garnish
Recipe Method
- In a large bowl, combine the flour, salt, and pepper. Coat the oxtail pieces evenly in the seasoned flour. Set the coated meat aside.
- Heat the vegetable oil in a large pot over high heat. Sear the oxtail in batches until browned on all sides. Transfer the browned meat to a plate and set aside.
- In the same pot, sauté the chopped onion until translucent and softened, about 10 minutes. Add the minced garlic and cook for another minute.
- Return the browned oxtail to the pot and add the Worcestershire sauce. Stir to combine.
- Add the bay leaves, ground cumin, ground coriander, cinnamon sticks, and a pinch of ground cinnamon to the pot. Pour in the red wine and reduce the heat to medium.
- Add the beef stock, stirring to mix all the ingredients together. Cover the pot with a lid and simmer for about 2 hours and 30 minutes, checking occasionally and adding more stock if necessary.
- After 2 hours and 30 minutes, remove the lid and add the potatoes and carrots. Simmer for an additional 30 minutes until the vegetables are tender.
- Serve the oxtail stew hot, garnished with chopped parsley.
