French Onion Soup Recipe

Recipe Ingredients
- 50g SPAR salted butter
- 1kg SPAR Freshline onions, sliced thinly
- 3-4 sprigs of thyme
- 5g SPAR white sugar
- 4 SPAR Freshline garlic cloves, sliced thinly
- 30ml SPAR wheat cake flour
- 2 SPAR beef stock cubes
- 12 slices SPAR Freshline French bread
- 140g SPAR mozzarella cheese, grated
Recipe Method
- Melt your butter in a large saucepan. Add the onions, thyme, and fry with the lid on for 6-8 minutes at a medium heat until softened. Add your sugar and cook for another 10-12 minutes on low heat. Continue stirring until the onions are caramelised. Take special note to avoid burning them while cooking.
- Dissolve your beef stock cubes in 1.3l of boiling water.
- Add your garlic to the pot and cook for another 3 minutes on low heat. Then, mix in your flour and increase the heat as you gradually incorporate the beef stock mixture. Reduce the heat to the lowest setting and simmer for 15-20 minutes, removing the thyme thereafter.
- Toast your French bread under the grill, set aside and leave your grill on.
- Ladle the soup into bowls, place two slices of the toasted bread on top and sprinkle a generous helping of the cheese. Place your heatproof bowls under the grill until the cheese has melted and serve!
