Quick & Easy Lamb Pie Recipe

Easter and roast lamb have a close association. Here is a quick and easy way to serve lamb if you don’t have the inclination to prepare a roast with all the accompaniments.

Recipe Ingredients

  • 2 x 400g rolls of SPAR Frozen Puff Pastry, thawed
  • 1 box of frozen SPAR Lamb Burger Patties
  • SPAR Mint Jelly

Recipe Method

  1. Preheat the oven to 220°C and position the oven rack in the centre. Lightly grease a baking tray.
  2. Pan-fry the frozen patties briefly on each side until they are half-cooked and browned. Let them cool.
  3. Unroll the puff pastry and gently stretch each sheet using your hands or a rolling pin.
  4. Cut each pastry sheet into 3 wide strips.
  5. Place a cooled burger patty in the centre of each strip, add a generous teaspoon of mint jelly on top, and wrap the pastry around the burger patty. Secure the edges by tucking them underneath and place each parcel seam-side down on the greased baking tray.
  6. Brush the parcels with milk or beaten egg and bake for 20 minutes until golden and crisp.

Hints & Tips

Ensure the puff pastry is fully thawed ahead of time to make assembly and baking quicker and easier.
