Recipe Ingredients

  • 500 g SPAR vanilla custard
  • 3 SPAR egg yolks
  • 250 ml SPAR icing sugar
  • 5 ml vanilla essence
  • 3 SPAR egg whites
  • 250 ml SPAR cream
  • 100 g SPAR coconut biscuits, broken into bite-sized pieces
  • Cinnamon to dust

Recipe Method

  1. Mix the custard, egg yolks, icing sugar, and vanilla essence together.
  2. Beat egg whites until stiff peaks form.
  3. In a separate bowl, beat the cream and fold in the custard mixture along with the beaten egg whites. Lastly, fold in the chopped biscuits.
  4. Pour into a suitable container. Dust with cinnamon and place in the deep freeze for about 6 hours or until it has frozen.
  5. Scoop into balls using an ice cream scoop. Serve sprinkled with extra cinnamon.

Hints & Tips

For a delightful variation, try adding a handful of chopped SPAR chocolate pieces or a swirl of caramel sauce before freezing.
