Coconut and Chia Seed Delight Recipe

Recipe Ingredients

  • 1 can SPAR coconut milk
  • 1 cup SPAR cooked jasmine rice
  • 1 pinch of salt
  • 1-2 Tbsp cinnamon sugar (or a sugar substitute of your choice)
  • 3 Tbsp chia seeds
  • 125 ml SPAR apple juice
  • 1 Tbsp honey (or a sugar substitute)
  • 1 punnet SPAR Freshline raspberries
  • Fresh mint for serving

Recipe Method

  1. Cook the coconut milk, rice, salt, cinnamon sugar, and 1 Tbsp chia seeds together for 20 minutes or until thick and creamy. Leave to cool.
  2. While the pudding is cooling, mash the raspberries with 1 Tbsp honey (or a sugar substitute) to taste and soak the remaining chia seeds in the apple juice.
  3. Once the pudding has cooled, layer the coconut rice pudding, raspberry mixture, and chia seed mixture in glasses.
  4. Garnish with a mint leaf on top and serve.

Hints & Tips

For added flavour, toast some shredded coconut and sprinkle it on top before serving.
