Coconut and Chia Seed Delight Recipe

Recipe Ingredients
- 1 can SPAR coconut milk
- 1 cup SPAR cooked jasmine rice
- 1 pinch of salt
- 1-2 Tbsp cinnamon sugar (or a sugar substitute of your choice)
- 3 Tbsp chia seeds
- 125 ml SPAR apple juice
- 1 Tbsp honey (or a sugar substitute)
- 1 punnet SPAR Freshline raspberries
- Fresh mint for serving
Recipe Method
- Cook the coconut milk, rice, salt, cinnamon sugar, and 1 Tbsp chia seeds together for 20 minutes or until thick and creamy. Leave to cool.
- While the pudding is cooling, mash the raspberries with 1 Tbsp honey (or a sugar substitute) to taste and soak the remaining chia seeds in the apple juice.
- Once the pudding has cooled, layer the coconut rice pudding, raspberry mixture, and chia seed mixture in glasses.
- Garnish with a mint leaf on top and serve.
Hints & Tips
For added flavour, toast some shredded coconut and sprinkle it on top before serving.
