Recipe Ingredients

  • 175g SPAR Oats
  • 250ml SPAR Fat-Free Milk
  • 500ml Water
  • 400ml can SPAR Lite Coconut Milk
  • 1 tablespoon (15ml) Light Soft Brown Sugar
  • 1 teaspoon (5ml) Ground Cinnamon
  • A generous grating of Nutmeg, plus extra for serving
  • Pinch of Salt
For the Compote:
  • 3 tablespoons (45ml) Light Soft Brown Sugar
  • 3 Oranges, peeled and sliced
  • 200g Fresh or Frozen Mixed Berries

Recipe Method

  1. In a saucepan, combine the oats, fat-free milk, coconut milk, sugar, spices, and a pinch of salt. Cook over low heat for about 10 minutes, stirring occasionally to prevent the porridge from sticking. Continue cooking until the porridge reaches a thick and creamy consistency. Add a splash of extra milk if you prefer a thinner texture.
  2. While the porridge is cooking, prepare the berry compote. In a frying pan, heat the sugar with 2 tablespoons of water until dissolved. Once the mixture starts bubbling, add the orange slices and mixed berries. Stir and increase the heat, letting the mixture bubble for a few minutes until most of the liquid evaporates and the compote thickens to a sticky consistency.
  3. To serve, spoon the porridge into bowls, top with the orange and berry compote, and finish with an extra grating of nutmeg.
