Chicken Corn Flake Bites Recipe
Enjoy these crunchy chicken bites with a delicious dip, perfect for a lunchtime snack or casual dinner. Tender on the inside and crunchy on the outside.
Recipe Ingredients
- 600g SPAR skinless, boneless chicken breasts
- 125ml SPAR brown bread flour
- 1 tsp SPAR chicken spice
- 1 tsp dried mixed herbs
- 2 large SPAR eggs
- 750ml SPAR cornflakes, finely crushed
Recipe Method
- Preheat oven to 200°C. Line a large baking sheet with baking paper and spray with non-stick spray.
- Cut the chicken into bite-sized pieces.
- Combine the flour, chicken spice, and mixed herbs in a shallow dish.
- Beat the eggs and place them in another shallow dish.
- Place the crushed cornflakes in a third dish.
- Coat each chicken piece in the flour mixture, shaking off any excess.
- Dip the floured chicken pieces in the beaten egg, then roll them in the crushed cornflakes, shaking off any excess.
- Arrange the chicken bites on the prepared baking sheet. Lightly spray each piece with non-stick spray to seal the coating.
- Bake for 8 minutes. Turn each piece over and continue baking until the outside is crisp and the centers are cooked through, approximately another 6-8 minutes.
- Serve the chicken bites on skewer sticks.
Hints & Tips
Baked chicken bites can be frozen for up to 2-3 months. To reheat, bake frozen chicken in a 180°C oven for 20 minutes or until warmed through.
Quick Tomato Dip:
- Fry a chopped SPAR Freshline onion in a little SPAR sunflower oil.
- Add 3 chopped SPAR Freshline tomatoes, 1 tbsp SPAR tomato sauce, 1 tsp SPAR sugar, 375ml water, and a sprinkle of mixed herbs.
- Boil gently until the sauce thickens. Season and serve.
