Recipe Ingredients

  • 4 SPAR Freshline plums
  • 2 SPAR Freshline peaches or nectarines
  • 20g SPAR Castor sugar
  • 4 slices SPAR Freshline white bread
  • 1 large SPAR egg
  • 150ml SPAR Low Fat 2% Milk
  • 1 tsp vanilla extract
  • 20g SPAR butter
  • SPAR Icing sugar, for sprinkling

Recipe Method

  1. Halve, pit, and slice the plums and peaches or nectarines. Place them in a saucepan with the castor sugar and 100ml of water. Simmer for 8-10 minutes, until just tender.
  2. ​While the fruit simmers, cut each slice of bread in half diagonally.
  3. In a large shallow dish, beat together the egg, milk, and vanilla extract. Add the bread pieces and let them soak for about 5 minutes, turning once to ensure both sides are well soaked.
  4. Heat the butter in a large non-stick frying pan. Cook the soaked bread for about 1-2 minutes per side, until golden brown.
  5. Divide the eggy bread between 4 warm serving plates and spoon the fruit on top. Sprinkle with a little icing sugar before serving.

Hints & Tips

This recipe is a great way to use up leftover bread, brioche, or panettone. In fact, slightly stale bread (2-3 days old) works best as its drier texture absorbs more liquid.
