Breakfast Eggy-Bread Recipe

Recipe Ingredients
- 4 SPAR Freshline plums
- 2 SPAR Freshline peaches or nectarines
- 20g SPAR Castor sugar
- 4 slices SPAR Freshline white bread
- 1 large SPAR egg
- 150ml SPAR Low Fat 2% Milk
- 1 tsp vanilla extract
- 20g SPAR butter
- SPAR Icing sugar, for sprinkling
Recipe Method
- Halve, pit, and slice the plums and peaches or nectarines. Place them in a saucepan with the castor sugar and 100ml of water. Simmer for 8-10 minutes, until just tender.
- While the fruit simmers, cut each slice of bread in half diagonally.
- In a large shallow dish, beat together the egg, milk, and vanilla extract. Add the bread pieces and let them soak for about 5 minutes, turning once to ensure both sides are well soaked.
- Heat the butter in a large non-stick frying pan. Cook the soaked bread for about 1-2 minutes per side, until golden brown.
- Divide the eggy bread between 4 warm serving plates and spoon the fruit on top. Sprinkle with a little icing sugar before serving.
Hints & Tips
This recipe is a great way to use up leftover bread, brioche, or panettone. In fact, slightly stale bread (2-3 days old) works best as its drier texture absorbs more liquid.
