Blueberry & Ricotta Flapjacks Recipe
Indulge in a decadent Sunday brunch or a delightful after-school snack with these delicious flapjacks featuring fresh blueberries and honey.
Recipe Ingredients
- 1 cup (250 g) SPAR Cake Flour
- 2 tsp (10 ml) baking powder
- A pinch of salt
- 2 tbsp (30 ml) SPAR Caster Sugar
- 1 egg
- 1/2 cup (125 ml) SPAR Full Cream Milk
- 50 ml SPAR Butter, melted
- 1 tub (270 g) ricotta
- A handful of fresh blueberries
- SPAR Honey (for serving)
Recipe Method
- In a separate bowl, combine the egg, milk, melted butter, and ricotta, mixing well.
- In another bowl, mix the flour, baking powder, salt, and caster sugar. Make a well in the centre of the dry ingredients and pour in the wet mixture.
- Gently mix until you achieve a smooth batter.
- Heat a non-stick frying pan and fry spoonful’s of the batter until bubbles form on the surface.
- Before flipping, add a generous tablespoon of blueberries to each flapjack.
- Remove the flapjacks from the pan and keep them warm in an oven until ready to serve.
- Serve with honey or syrup and additional fresh blueberries.
