Recipe Ingredients

  • 1 ½ packets SPAR Coconut Tea Biscuits (200g each)
  • 115g butter, melted
  • 2 tins SPAR full cream condensed milk
  • 4 SPAR Freshline lemons (zest of 1, and juice of 4)
  • 6 large SPAR eggs, separated
  • 1 cup SPAR castor sugar

Recipe Method

For the Biscuit Base:

  1. Preheat your oven to 180°C and grease a 20cm round loose-base tin with non-stick spray.
  2. Place the SPAR Coconut Tea Biscuits into a resealable bag and crush them with a rolling pin until fine crumbs are formed.
  3. Transfer the crushed biscuits to a bowl and mix in the melted butter.
  4. Press the biscuit mixture evenly into the greased tin, covering the bottom and sides firmly.
  5. Bake for 8 minutes, then remove from the oven and let it cool.
For the Lemon Filling:
  1. In a large mixing bowl, pour the SPAR full cream condensed milk.
  2. Zest the rind of one SPAR Freshline lemon and add it to the condensed milk.
  3. Squeeze the juice from four lemons and add it to the condensed milk.
  4. Add the six egg yolks and whisk everything together until well combined.
  5. Pour the filling onto the cooled biscuit crust and bake for 22-25 minutes, or until the filling is just set but still slightly jiggly in the centre.
For the Meringue:
  1. Using an electric mixer, beat the egg whites until they form stiff peaks, about 3 minutes. Gradually add the castor sugar while mixing, until the meringue is stiff and glossy.
  2. Spoon the meringue onto the lemon filling, spreading it evenly. Fluff up the meringue with a spatula to form peaks.
  3. Bake again for another 12 minutes, or until the meringue is a light golden colour.
  4. Allow the pie to cool and set for about 3 hours before serving.
