Simple 6-Ingredient Lemon Meringue Pie Recipe

Recipe Ingredients
- 1 ½ packets SPAR Coconut Tea Biscuits (200g each)
- 115g butter, melted
- 2 tins SPAR full cream condensed milk
- 4 SPAR Freshline lemons (zest of 1, and juice of 4)
- 6 large SPAR eggs, separated
- 1 cup SPAR castor sugar
Recipe Method
For the Biscuit Base:
- Preheat your oven to 180°C and grease a 20cm round loose-base tin with non-stick spray.
- Place the SPAR Coconut Tea Biscuits into a resealable bag and crush them with a rolling pin until fine crumbs are formed.
- Transfer the crushed biscuits to a bowl and mix in the melted butter.
- Press the biscuit mixture evenly into the greased tin, covering the bottom and sides firmly.
- Bake for 8 minutes, then remove from the oven and let it cool.
For the Lemon Filling:
- In a large mixing bowl, pour the SPAR full cream condensed milk.
- Zest the rind of one SPAR Freshline lemon and add it to the condensed milk.
- Squeeze the juice from four lemons and add it to the condensed milk.
- Add the six egg yolks and whisk everything together until well combined.
- Pour the filling onto the cooled biscuit crust and bake for 22-25 minutes, or until the filling is just set but still slightly jiggly in the centre.
For the Meringue:
- Using an electric mixer, beat the egg whites until they form stiff peaks, about 3 minutes. Gradually add the castor sugar while mixing, until the meringue is stiff and glossy.
- Spoon the meringue onto the lemon filling, spreading it evenly. Fluff up the meringue with a spatula to form peaks.
- Bake again for another 12 minutes, or until the meringue is a light golden colour.
- Allow the pie to cool and set for about 3 hours before serving.
