Recipe Ingredients

For the Tomato Sauce:

  • SPAR Extra virgin olive oil
  • 1 can chopped or peeled Italian tomatoes
  • 2 cloves of garlic, roughly chopped
  • Salt to taste
  • 1 pinch of dried parsley
  • 1 pinch of dried basil

For the Aubergines:

  • SPAR Extra virgin olive oil
  • 1 clove of garlic, roughly chopped
  • 1 aubergine, sliced
  • Mozzarella cheese, cut into 1cm cubes
  • Parmesan cheese, grated

Recipe Method

  1. Preheat your oven: 200/220°C
  2. Make the tomato sauce: Heat your olive oil in a medium pot and fry the chopped garlic. Once it is golden brown, add your canned tomatoes and season to taste. Allow to simmer for 20 minutes. Once finished, add your dried herbs and set aside.
  3. Prepare your aubergines: In a medium pan, heat your olive oil and fry the chopped garlic until golden brown. Once finished, remove the garlic, and reserve the oil. Use your garlic oil to brush each of the aubergine slices and pan fry or grill them over a medium heat until they are soft to the touch.
  4. In an ovenproof dish, layer your cooked aubergine and spoon the tomato sauce to evenly coat each slice. Add your mozzarella cheese on top.
  5. Cook in your preheated oven until the cheese is golden and melted.
  6. Serve with the grated Parmesan and chopped fresh parsley and basil. (Optional)
