Tiers of Joy and Taste Recipe

Makes 1 large Christmas cake
Recipe Ingredients
- ¼ cup of SPAR Butter
- 1 cup of SPAR Icing Sugar
- 1 Tbsp (15ml) SPAR Milk (optional)
- 850g SPAR Bakery Cherry Genoa Christmas Fruitcake
- 100g White fondant
- 400g SPAR Bakery Christmas Pudding
- 2 x 400g SPAR Bakery Christmas Alcohol Infused Iced Fruitcake
- Fresh Berries
Recipe Method
- To make the icing, beat the butter until light and fluffy and then gradually add the sugar. Whisk in the milk if the icing is too thick.
- Run a palette knife of icing over the side of the Cherry Genoa to create a light frosting.
- Roll out the fondant until 1 mm thin. Cut out stars of various sizes. Lightly brush the one side of the star with water and stick on the Christmas pudding.
- Place the Genoa onto a Cake stand and top with the Iced Fruit Cakes.
- Crown with the Fondant Christmas Pudding and dust with icing sugar.
- Serve with fresh berries.
