Makes 1 large Christmas cake

Recipe Ingredients

  • ¼ cup of SPAR Butter
  • 1 cup of SPAR Icing Sugar
  • 1 Tbsp (15ml) SPAR Milk (optional)
  • 850g SPAR Bakery Cherry Genoa Christmas Fruitcake
  • 100g White fondant
  • 400g SPAR Bakery Christmas Pudding
  • 2 x 400g SPAR Bakery Christmas Alcohol Infused Iced Fruitcake
  • Fresh Berries

Recipe Method

  1. To make the icing, beat the butter until light and fluffy and then gradually add the sugar. Whisk in the milk if the icing is too thick.
  2. Run a palette knife of icing over the side of the Cherry Genoa to create a light frosting.
  3. Roll out the fondant until 1 mm thin. Cut out stars of various sizes. Lightly brush the one side of the star with water and stick on the Christmas pudding.
  4. Place the Genoa onto a Cake stand and top with the Iced Fruit Cakes.
  5. Crown with the Fondant Christmas Pudding and dust with icing sugar.
  6. Serve with fresh berries.
