Recipe for
Mediterranean Smoked Chicken, Pasta and Basil Salad

A full flavoured pasta salad featuring the Mediterranean influences of olives, tomatoes and basil.
Ingredients

8 ml salt to taste
Dash SPAR sunflower oil
500 g SPAR Italian Style Mixed Screws Tricolore noodles
15 ml basil Pesto
250 g SPAR Freshline mini plum tomatoes, halved
pouch SPAR Calamata olives, drained, halved ,and pitted
½ SPAR Freshline cucumber, diced
+-150 g salami or 2 large smoked chicken breasts, cubed or sliced cut into strips
SPAR Salad & Chip dressing
Freshly ground black pepper
Method
Pour a kettle full of boiling water into a pot , cover with the lid and bring back to a quick boil. Add in the salt, oil and noodles and once they are boiling steadily uncovered, time the cooking for 5-8 minutes.
Tip the cooked pasta into a colander, shaking well to thoroughly drain off the water.
Transfer into a large bowl, and toss in the pesto to evenly coat the noodles. Refrigerate this while you continue preparing the vegetables.
Toss all the ingredients together, using just enough dressing to moisten the salad to the desired amount. Return to the fridge until ready to serve. Grind black pepper onto each portion after serving up,

Leftovers would keep well for inclusion in a lunchbox for a salad the next day.
