Recipe for Mock Seafood Platter

This seafood platter makes use of economical ingredients such as crab sticks and fish bites to make a platter that's attractive but won't break the bank.

Ingredients(Serves: family of 5)

  • 125 g box SPAR crab sticks, thawed in the fridge
  • ½ a 800 g box frozen, bite-size battered fish eg Smackeroos
  • 2 boxes SPAR crumbed calamari rings or prawn tails
  • 500 g Half-mussels, topped with 100 g wedge blue cheese, grated
  • 1 bag SPAR Shells, prawn flavoured snacks
  • 1 tub SPAR low-fat salmon flavoured cream cheese thinned down slightly
  • with SPAR creamy mayonnaise
  • 1 pack of SPAR Freshline mini garlic loaves
  • 2 SPAR Freshline lemons, quartered

Method

  1. Pre-heat oven to 220ºC. Set the oven shelf one above centre.
  2. Place fish chunks and crumbed calamari rings/prawn tails, spaced apart, on a large baking tray. Bake for 20 minutes. Towards the end of this oven time, place the thawed crabsticks in a colander and pour over boiling water, drain and place alongside the now-baked seafood on the same oven tray, covered with foil and set aside on a hot tray or in a warmer drawer.
  3. Reduce oven to 180º C.
  4. Bake the tray of cheese-topped mussels on the one-above centre shelf, at the same time as the foil-wrapped garlic loaves on the centre oven shelf. Bake for 10 - 12 minutes until the cheese is bubbling and brown.
  5. Meanwhile, arrange the prawn flavoured shell snacks, lemon quarters and the salmon dip on a large serving platter.
  6. Add all the hot baked seafood and opened garlic loaves onto the platter, and serve immediately.

Prep Time:

 SPAR Oven chips may be used instead of the Shell crisps, and baked in a separate tray alongside the fish and calamari tray in Step 2.
