Wow your guests with a flaming berry dessert soaked in cinnamon and brandy.

Ingredients(Serves: 5)

  • 1 punnet SPAR Freshline strawberries, hulled and sliced
  • 1 punnet blue berries or raspberries, rinsed
  • 1 punnet or 410 g can gooseberries, rinsed
  • 50 ml honey
  • 2 ml vanilla essence
  • 1 cinnamon stick
  • 75 ml brandy

Method

  1. Combine honey, essence and cinnamon stick in a SPAR Good Living 20cm frying pan, and gently heat until liquid and bubbling.
  2. Add the berries and poach gently for 5-8 minutes over steady heat, shaking the pan occasionally to keep the cooking even. Remove the cinnamon stick.
  3. Warm the brandy in a jug in a microwave oven (+-15 seconds) and ignite with a match and immediately pour onto the hot dessert as it flames. Baste the food with the flaming juices until the flames die - serve at once.

Prep Time:

  • Stand back when flaming. Never pour alcohol straight from the bottle onto a very hot food as the alcohol in the bottle can catch fire.
  •  Do not substitute brandy with wine as it will not burn due to the lower alcohol content.
  • The cooked berries may be poured into SPAR Freshline meringue cases. Serve immediately.
  • When berries are out-of-season, SPAR canned peach slices are a successful substitute.
