Savoury Bread and Butter Pudding Recipe

A filling and vegetarian version of the classic pudding.

Recipe Ingredients

  • 1 tablespoon SPAR olive oil
  • 25g SPAR butter
  • 1 SPAR Freshline onion, finely chopped
  • 1 SPAR Freshline red pepper, finely chopped
  • 100g SPAR Freshline white sliced mushrooms
  • 1 tablespoon SPAR Freshline fresh thyme, chopped
  • 75g grated MARKSBURY SELECT Parmigiano Reggiano or parmesan cheese
  • 50g SPAR grated cheddar cheese
  • 50g SPAR grated mozzarella cheese
  • 1 SPAR Freshline sweet Chilli garlic bread , thinly sliced
  • 1 SPAR Freshline Cheese and Onion garlic bread, thinly sliced
  • 2 cups cream
  • 3 SPAR eggs
  • 1/2 teaspoon SPAR Dijon mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Recipe Method

  1. Preheat the oven to 190°C and grease an ovenproof dish.
  2. Heat a large frying pan over a high heat and melt the olive oil and butter.
  3. Add onions, pepper, mushrooms and thyme. Cook until onions are translucent.
  4. Season well and set aside to cool.
  5. Add the cheeses and combine well.
  6. Place a layer of bread slices on the base of the dish, cover with a layer of cheese vegetable mixture and repeat.
  7. Beat together the cream, eggs, mustard, salt and pepper in a bowl.
  8. Pour this over the bread layers.
  9. Allow to stand for 10 minutes before baking in the oven for 20 minutes or until golden.
