Fillet Portions
Our SPAR Select Fillet Portions are made from ostrich meat which is high in
biologically available iron, making them a great choice for individuals suffering
from anaemia... and they’re delicious too.
COOKING INSTRUCTIONS
Ostrich Fillet should be grilled or braaied quickly to seal in natural juices. Brush
Ostrich Fillets with a little olive oil. Grill in smoking hot griddle pan or braai over
moderately hot coals. Once fillet is sealed, sprinkle with low salt seasoning. Use
tongs to turn meat twice on each side until cooked as preferred. Baste again with a
little olive oil. Do not overcook as meat will become dry. Remove from heat, cover
and leave to rest for 3 – 4 minutes before serving.
