​Fried Ice Cream Recipe

The contrast of a hot, crispy coating with creamy, cold ice-cream makes for a memorable dessert.

Recipe Ingredients

  • SPAR Vanilla & Blueberry Flavoured Ice Cream
  • ½ packet SPAR Marie Biscuits, very finely crushed
  • 1 egg, beaten
  • 1 teaspoon (5 ml) cinnamon
  • 2 tablespoons (30 ml) soft brown sugar
  • Oil to deep fry
  • ½ cup (125 ml) desiccated coconut

Recipe Method

  1. Scoop ice cream into 6 large balls. Freeze for at least two hours.
  2. Combine coconut, cinnamon, biscuit crumbs and sugar. Dip the balls in egg, then crumbs, repeat making sure they are firmly pressed into the ice cream and well coated.
  3. Freeze overnight on a tray lined with wax paper.
  4. Heat oil until very hot and deep fry balls for a few seconds.
  5. Remove only one or two from the freezer at a time.
  6. Drain on paper towel and serve immediately.
