Watermelon, coconut and mint cocktail Recipe

A perfect welcome non-alcoholic cocktail for a summer afternoon party.

Recipe Ingredients

  • ¼  watermelon, deseeded of the obvious black pips
  • 20  SPAR Freshline fresh mint leaves
  • 1 SPAR Vanilla pod, seeds only, scraped out and used– OPTIONAL, or add 1ml vanilla essence
  •  10ml SPAR honey
  • 200ml SPAR coconut cream

Recipe Method

  1. In a food processor , or a high-sided bowl or large jug if using a hand-blender, puree the melon and mint together thoroughly until the leaves are very finely chopped.
  2. Beat in the remaining ingredients.
  3. Pour into shallow cocktail glasses, and serve immediately with a short straw or stirrer.
  4. This cocktail is best enjoyed well chilled.

Hints & Tips

  • Use the tip of a paring knife to flick the black pips out from the melon flesh.
  • Pour the mixture into frozen lolly moulds for the children to enjoy in this form, instead of as a drink.
