Watermelon, coconut and mint cocktail Recipe
A perfect welcome non-alcoholic cocktail for a summer afternoon party.
Recipe Ingredients

¼ watermelon, deseeded of the obvious black pips

20 SPAR Freshline fresh mint leaves

1 SPAR Vanilla pod, seeds only, scraped out and used– OPTIONAL, or add 1ml vanilla essence

10ml SPAR honey

200ml SPAR coconut cream
Recipe Method

In a food processor , or a high-sided bowl or large jug if using a hand-blender, puree the melon and mint together thoroughly until the leaves are very finely chopped.

Beat in the remaining ingredients.

Pour into shallow cocktail glasses, and serve immediately with a short straw or stirrer.

This cocktail is best enjoyed well chilled.
Hints & Tips

Use the tip of a paring knife to flick the black pips out from the melon flesh.

Pour the mixture into frozen lolly moulds for the children to enjoy in this form, instead of as a drink.
