Thin-Crust Pizza with Peppers and Goat's Cheese Recipe

A colourful, crisp vegetarian pizza that combines the creamy flavour of goat's cheese with the spicy tang of piquanté peppers.

Recipe Ingredients

Sauce

  • 2 tbsp olive oil
  • 1 large garlic clove,thinly sliced
  • 1 handful basil,leaves picked
  • 1 tin tomatoes
 
  • 2 medium pizza
  • bases (approx. 23cm)
  • 150g mozzarella cheese, diced
  • 100g semi-soft goat’s cheese, cut into slices
  • ½ jar piquanté peppers, drained and sliced
  • ½ small bag rocket
 
 

Recipe Method

  1. Make the pizza sauce by gently heating the olive oil in a pan.
  2. Add the garlic and cook for 2-3 minutes until just golden.
  3. Add the basil leaves and cook for 1-2 minutes.
  4. Pour in the tomatoes and turn up the heat, squashing them with the back of a wooden spoon as much as you can.  As soon as the tomato sauce boils, remove from the heat and pass through a sieve. Leave the garlic and basil in the sieve but scrape off the juice on the underside.
  5. Return the sauce to the pan and bring to the boil. Reduce the heat and leave on a high simmer until the sauce is thick enough to spread on a pizza (about 20 mins).
  6. Preheat the oven to 210°C.
  7. Put the pizza bases on a baking tray.
  8. Add a few spoonfuls of the tomato sauce to the top of each pizza and spread all over the base with the back of a spoon.
  9. Sprinkle over the diced mozzarella, goat’s cheese and piquanté peppers.
  10. Cook in the oven for 10 minutes or until the cheese has melted.
  11. Scatter with rocket leaves and serve.
