Sweet Potato and Chicken Thai Green Curry Recipe

Recipe Ingredients

  • 2 Tbsp (30ml) Thai green curry paste
  • 2 tsp (10ml) SPAR sunflower oil
  • 1 can (400ml) SPAR coconut milk
  • 1 cup (250ml) SPAR chicken stock
  • 1 packet (500g) SPAR Freshline sweet potatoes
  • 1 packet (around 400g) mini chicken breast fillets
  • 1 punnet (350g) SPAR Freshline baby marrows
  • Freshline coriander and limes for serving

Recipe Method

  1. Fry the curry paste in the oil for a minute or two
  2. Add the coconut milk, stock and sweet potatoes and pop a lid on.
  3. Cook for 15 minutes
  4. Add the chicken, and season to taste
  5. Cook for 10 minutes, add the baby marrow and cook for another minute
  6. Serve with coriander and lime
