Stewed Apple Trio with Coconut Fluff Recipe

A simple and quick apple dish that's warm and satisfying on a cold evening.

Recipe Ingredients

  • 1 cinnamon stick
  •  25 ml   SPAR Golden syrup
  •  25 ml   boiling water
  • 1 large Granny Smith apples
  • 2 large Golden Delicious apples
  • 2 large Royal Gala apples
  • 150 ml SPAR long life cream, chilled
  • 25 ml  SPAR icing sugar
  •  25 ml brandy or sherry
  • 125 ml coconut-biscuit crumbs (purchased as branded biscuit crumbs in the baking ingredient  section, or crush several SPAR coconut tea  biscuits yourself)

Recipe Method

  1. Combine the cinnamon stick, syrup and water in a pot or microwaveable bowl and stir to dissolve the syrup in the hot water.
  2.  Rinse the apples, do not peel them, and cut the flesh off close to each core. Cube the flesh. Add into the syrup mixture.  Cover with cling film for microwaving, or the pots lid if cooking on the stove.
  3. Simmer for 12-15 minutes or until quite tender and the apple skins retain their colour.
  4. Meanwhile, whip the cream until firm peaks form. Gently fold in the icing sugar, brandy and biscuit crumbs.
  5. Serve the apples while still warm and the sauce separately for guests to spoon on themselves.

Hints & Tips

The large apples referred to are the larger loose-serve apples. If you have the pre-pack thrift variety, count two of them for one large apple, as they are sizeably smaller.
