Spicy Beans And Polenta Recipe

A delicious and quick meatless meal making use of protein-packed canned beans, cooked in a creamy spicy sauce, for the whole family to enjoy.

Recipe Ingredients

  • 10 ml SPAR olive oil
  • 7 ml ground cumin
  • 2 cloves garlic, finely chopped
  • 2 can SPAR diced tomato
  • ½ pouch SPAR creamy pepper sauce
  • 1 can kidney beans, drained and rinsed
  • 1 can SPAR butterbeans, drained and rinsed
  • 1 can chickpeas, drained and rinsed
  • Handful fresh Italian parsley, chopped

Recipe Method

1. In a SPAR Good Living non-stick saucepan, gently sauté the cumin and garlic in the olive oil over medium high heat.
2. Add in the diced tomato and pepper sauce.
3. Gently stir in the beans, chickpeas and parsley and reheat well. Serve immediately on crisply grilled polenta slices, or buttered toast for a quick light meal.

Hints & Tips

To rinse the beans, tip the can contents into a colander and shake gently under running tap water, until the beans move loosely.
Do not over-mix in step 3 or the beans will break up and give the meal a mushy appearance.
