Seafood Pilaf Recipe

Your choice of fish, fresh mussels and juicy prawns with a fragrant rice and a hint of chili and lime.

Recipe Ingredients

  • 5 tbsp canola oil
  • 2 red onions, chopped
  • 2 tsp cumin seeds
  • 4 cardamom pods, crushed
  • 1 cinnamon stick
  • 3 cloves
  • 1 star anise
  • 300g basmati rice
  • or brown rice
  • 500ml fish or chicken stock
  • 300g fresh mussels, cleaned and beards removed
  • 400g firm fish, such as yellow tail, skin removed and cut into 5cm pieces
  • 8 prawns, cleaned

To serve

  • 1 red chilli, finely sliced
  • 2 purple spring onions, finely sliced
  • 2 limes, halved

Recipe Method

  1. In a large pot, heat 3 tablespoons oil and sauté onions and spices for 4 minutes.
  2. Add the rice and toast for 3 minutes.
  3. Pour in the hot stock and simmer for roughly 12 minutes depending on chosen rice. At this stage the rice will not be cooked through.
  4. Place the mussels and fish on top of the rice, cover with a lid and steam for 10 minutes or until the mussels open and the fish is cooked through.
  5. In a separate pan, heat 2 tbsp oil.
  6. When the pan is hot, grill the prawns on each side until they turn lovely and orange.
  7. To serve, place the pilaf with mussels and fish into a serving dish, top with the prawns, sliced chilli
  8. and spring onions, then squeeze over lime juice and serve.
