Shandy Chicken Recipe

Spoil dad this Fathers' Day with this perfectly simple recipe for the children to cook, while mom prepares his favourite dessert!

Recipe Ingredients

  • 25 ml SPAR canola or olive oil
  • +- 900 g chicken braai-pack (4 thighs and 4 drumsticks)
  • 1 large onion, sliced into fine rings
  • 75 ml seedless raisins
  • 50 g sachet tomato paste
  • 1 can beer shandy
  • 70 g pkt SPAR Cream of Chicken soup powder

Recipe Method

  1. Lightly brown the chicken pieces and onion rings in the heated little oil in a pan. Transfer into a medium size SPAR Good Living casserole dish, and sprinkle on the raisins.
  2. Combine the tomato paste, shandy and soup powder in a SPAR Good Living 3 litre porcelain mixing bowl, and pour over the chicken.
  3. Cover the dish with its lid and bake for 55 minutes. Stir half-way through this time to ensure the sauce is smooth.

Hints & Tips

  • Beer shandy may be substituted with a can of Rock shandy or Coca-Cola.
  • Cubed ostrich instead of chicken, and using a Brown Onion soup powder instead, is healthy low-fat option.
