Madeleines Recipe

The classic, melt in the mouth, French biscuit, made famous by writer, Marcel Proust.

Recipe Ingredients

  • 3 x SPAR large eggs
  • 3/5 cup (120 g) SPAR sugar
  • 1.5 tsp (7.5 ml) lemon or orange zest (optional)
  • 4/5 cup (120 g) flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup (80 ml) SPAR butter, melted
  • 2 Tbsp SPAR icing sugar

Recipe Method

  1. Whisk the eggs with sugar until pale yellow.Use an electric beater if you have one.
  2. Add zest.
  3. Whisk together dry ingredients and add to the egg mixture gently, until just combined.
  4. Add melted butter.
  5. Refrigerate the batter for at least 1 hour (or up to 2 days).
  6. Preheat oven to 180C.
  7. Grease a non-stick madeleine pan* with non-stick spray.
  8. Bake for 8-10 mins until slightly golden.
  9. Leave to cool, then remove from the pan.
  10. Dust with icing sugar before serving.

Hints & Tips

*If you do not have a madeleine pan, a mini muffin pan can be used.
