Mocha-Ginger Fridgecake

An interesting cross between a cheesecake and a Tiramisu that can be served as a tea-time or dessert treat.

Ingredients

  • 400 ml your favourite blend of SPAR filter coffee, left to cool completely
  • as black, unsweetened coffee
  • 1 tub SPAR cheese cake mix (400g)
  • 12 chunks ginger in syrup, slivered
  • 1 packet cappuchino-flavour Marie biscuits (17 biscuits)
  • 250 ml SPAR fresh cream, stiffly whipped

Method

  1. Beat the cheesecake powder into the cooled black filter coffee, (instead of the water referred to on the pack instructions.)
  2. Stir in the ginger slivers.
  3. Place enough Marie biscuits to cover the base of small square or round glass dish. Spoon over half the cheesecake mix, repeat with another biscuit layer and the remaining cheesecake mix.
  4. Cover with whipped cream and finely crumble 6 Marie biscuits over.
  5. Refrigerate for a minimum of 2 hours.
