Mediterranean Vegetable Bake

Enjoy this easy, cheesy vegetable bake with pasta and chick peas as a main meal. The whole family will love it!

Ingredients

  • 2 pouches SPAR Freshline Mediterranean Vegetable Selection for Two
  • 1 can chickpeas, drained
  • 500 ml SPAR macaroni or screw noodles (cooked and drained measure)
  • 500 ml prepared white sauce *
  • 2 large SPAR eggs, separated
  • 40 g packet grated Parmesan cheese
  • 250 ml SPAR grated cheddar cheese (200 g)
  • 25 ml dried or fresh breadcrumbs

Method

1. Preheat oven to 200ºC.
2. Microwave both packets of vegetables, one at a time, according to the on-pack instructions.
3. Transfer the vegetables into a casserole dish, along with the chickpeas and cooked pasta.
4. Mix the egg yolks and parmesan cheese into the white sauce and stir this into the vegetable and pasta mixture.
5. Fold in the stiffly beaten egg whites.
6. Sprinkle over the cheese and breadcrumbs.
7. Bake for 20 minutes.

Hints & Tips

*This amount of white sauce needs 60g margarine, 125 ml cake flour and 500 ml milk (or part of this measure as fresh cream), salt and pepper.

The dish may be prepared ahead of time to the end of Step 6, before baking in the oven as required.
