Lemon and Poppy Seed Trifle with Cointreau Recipe

Lemon and poppy seed muffins make an interesting trifle base. Add some lemon curd and Cointreau liqueur for a decadent touch.

Recipe Ingredients

  • 4 SPAR Freshline Lemon poppy seed Muffins
  • 250 g SPAR Freshline Strawberries, hulled and sliced
  • 1 small Bunch SPAR Freshline red grapes 
  • 160 g SPAR Freshline raspberries
  • Cointreau liqueur 
  • 250 ml SPAR cream, whipped
  • 250 ml Lemon curd 
  • 1 Lemon jelly (made according to packet instructions and chopped up)

Recipe Method

  1. Cut the muffins into small pieces. Using 6 glasses or a serving bowl, layer the trifle starting with fruit then chopped muffin, sprinkle with liqueur.
  2. Continue layering with chopped jelly, lemon curd and cream. 
  3. You can do as many or few layers as you wish depending on the bowl or glasses you are using.
  4. Chill in the fridge until needed.
