Hot Sweet Potato Salad with a Cherry Salsa Recipe

Sweet potatoes are a rich source of vitamins and fibre. Serve them as a colourful, hot side dish with jalapenos and cherries.

Recipe Ingredients

  • 6-8 medium sweet potatoes
  • A glug of SPAR olive or vegetable oil
  • 1 red onion, finely chopped
  • 2 jalapenos, sliced
  • 1cup (150 g) pomegranate jewels
  • A handful of fresh coriander leaves
  • Juice of 1 lime
  • 1 punnet (200g) fresh cherries, pitted and chopped
  • ¼ cup (65 ml) red wine vinegar
  • ¼ cup (65ml) SPAR olive oil
  • 2 Tbsp (30 ml) SPAR wholegrain mustard

Recipe Method

  1. Wash and scrub the sweet potatoes.
  2. Cut along the length of the sweet potatoes into 5 mm thick slices.
  3. Heat a griddle pan until smoking hot.
  4. Brush the sweet potato slices with olive oil.
  5. Fry the slices for 2-3 minutes each side or until just cooked and charred, but still firm.
  6. Combine the red onion, jalapenos, pomegranate, coriander, lime juice and cherries to make the salsa.
  7. Shake together the red wine vinegar, olive oil and mustard to make a vinaigrette.
  8. Gently toss the hot sweet potato slices with the vinaigrette just before serving and top with the cherry salsa.
