Halloumi and Pineapple Veggie Burgers Recipe

Layers of grilled halloumi, charred pineapple, chili and coleslaw on a fresh toasted bun.

Recipe Ingredients

  • ¼ head cabbage, thinly shredded
  • 1 carrot, peeled and cut into thin strips
  • 2 spring onions, sliced
  • ¼ cup SPAR Mayonnaise and extra for serving
  • Salt and freshly milled pepper
  • 4 burger rolls, sliced through and buttered
  • 1 pineapple peeled, cut into 4 slices
  • 1 Tbsp SPAR Olive Oil
  • 1 block halloumi, cut into 8 slices
  • Pickled jalapeños, optional and to taste
  • Sweet chilli sauce to taste

Recipe Method

  1. Make a quick coleslaw by mixing the cabbage, carrot, spring onions and mayonnaise.
  2. Butter the rolls and toast in a hot pan, and set aside.
  3. Cook the pineapple in a dry pan until charred on both sides (this can also be done on the braai).
  4. Cook the halloumi in olive oil until brown on either side - make sure the pan is quite hot, otherwise the halloumi melts too much before it has any flavour.
  5. Build the burgers by layering mayo, slaw, pineapple, halloumi, jalapenos and some sweet chilli sauce if you are using.
