Halloumi and Pineapple Veggie Burgers Recipe
Layers of grilled halloumi, charred pineapple, chili and coleslaw on a fresh toasted bun.
Recipe Ingredients
- ¼ head cabbage, thinly shredded
- 1 carrot, peeled and cut into thin strips
- 2 spring onions, sliced
- ¼ cup SPAR Mayonnaise and extra for serving
- Salt and freshly milled pepper
- 4 burger rolls, sliced through and buttered
- 1 pineapple peeled, cut into 4 slices
- 1 Tbsp SPAR Olive Oil
- 1 block halloumi, cut into 8 slices
- Pickled jalapeños, optional and to taste
- Sweet chilli sauce to taste
Recipe Method
- Make a quick coleslaw by mixing the cabbage, carrot, spring onions and mayonnaise.
- Butter the rolls and toast in a hot pan, and set aside.
- Cook the pineapple in a dry pan until charred on both sides (this can also be done on the braai).
- Cook the halloumi in olive oil until brown on either side - make sure the pan is quite hot, otherwise the halloumi melts too much before it has any flavour.
- Build the burgers by layering mayo, slaw, pineapple, halloumi, jalapenos and some sweet chilli sauce if you are using.
