Hot Fruit Crumble Recipe

This crumble substitutes muesli for some of the traditional flour based topping for a healthier option. It is still deliciously satisfying on a cold evening.

Recipe Ingredients

  • 250 g dried fruit-salad
  • 150 ml SPAR orange juice
  • 30 ml brandy - optional, or extra orange juice
  • 75 ml water
  • 25 ml SPAR honey
  • 10 ml SPAR lemon juice
  • 10 ml custard powder mixed with a little water
  • 80 g SPAR margarine, softened
  • 190 ml SPAR cake flour
  • 75g brown sugar
  • 125 ml SPAR Breakfast Crunch toasted muesli
  • 25 g pecan nuts, chopped

Recipe Method

  1. Soak the fruit in the juice, brandy and water, all day or overnight. Turn over occasionally to ensure all the fruit comes into regular contact with the liquid.
  2. Preheat the oven to 200 º C.
  3. Gently simmer the soaked fruit in a covered saucepan, over low heat, until softened (+- 10 minutes).
  4. Stir in the honey, lemon juice and custard powder paste and cook for a few seconds over low heat. Cut the larger pieces of fruit such as the pear and peaches, in half, using SPAR Good Living kitchen scissors.
  5. Spoon this mixture into a medium-size oven dish and spoon over the topping ingredients prepared by rubbing the margarine into the flour, then mIxing in the remaining ingredients.
  6. Bake for 20 minutes until crunchy and golden. Serve hot.

Hints & Tips

Prepare the topping mixture during the fruit-soaking time to speed up the finishing off stage of the recipe when required.
