Egg Fried Rice Recipe

A great way to use leftover rice for a quick and easy dinner.

Recipe Ingredients

  • 2 cups SPAR Jasmine Rice, cooked according  to packaged instructions. Cool overnight.
  • 6 spring onions, chopped
  • 2 tsp sesame oil
  • 1 tsp garlic paste
  • 1 Tbsp ginger paste
  • 2 carrots, peeled and sliced into ribbons
  • 1 punnet mushrooms, sliced
  • 100g mange tout, sliced in half
  • A handful fresh coriander
  • 3 Tbsp soya sauce
  • 4 eggs, beaten
  • Fresh chilli to taste

Recipe Method

  1. Heat the sesame oil in a large pan or wok, add the spring onion, garlic and ginger and cook for a minute or so.
  2. Add the carrots, mushrooms and mange tout and cook for 3 minutes.
  3. Add the rice, fresh coriander and soya sauce and heat through for about 5 minutes.
  4. Add the egg and stir it through the rice. Let it cook for about 5 minutes stirring the whole time.
  5. Serve with fresh chilli to taste.
