Crunchy Salad Recipe

This tasty salad is packed with vitamins, minerals, protein and healthy fats. Perfect anytime but especially good for expectant mothers.

Recipe Ingredients

  • 4   SPAR eggs, hard boiled, peeled and quartered
  • ½  tub SPAR Freshline Baby Spinach Leaves
  • ½ tub  SPAR Freshline Sweet Baby Greens Mix
  • 1 large SPAR Freshline carrot, peeled and coarsely grated
  • 1  SPAR Freshline Ripe &Ready Hass Avocado pear, peeled and  sliced
  • +- 225 g Mint Halloumi cheese, sliced into narrow batons
  • Juice of 1/2 fresh orange
  • 2 ml SPAR Honey
  • 25 ml SPAR Olive Oil

Recipe Method

  1. Hard boil the eggs.
  2. Meanwhile, scatter the leaves, carrot, and avocado pear cubes onto 4 salad platters or deep individual bowls.
  3. Heat a little olive oil in a heavy pan and add in the cheese, only turning them over once they are a deep brown colour. Move the cheese around in the pan, turning and browning the other sides too.  Lift out with a slotted spoon, and transfer onto the other salad platter ingredients.  Add the quartered eggs.
  4. Shake together the orange juice, honey and olive oil, and splash onto the salad. Enjoy immediately.

Hints & Tips

Cooked halloumi cheese is best enjoyed warm or at room temperature, rather than chilled.
