Chocolate Mousse Recipe

You can do without the egg yolks, cream and rich ingredients, and still enjoy this classic given a lighter twist.

Recipe Ingredients

  • 380g can low fat evaporated milk
  • 50ml SPAR white sugar
  • 30ml cocoa powder dissolved completely in 45ml boiling water
  • 80g slab dark chocolate
  • 10ml gelatine soaked in 30 ml cold water
  • 1 egg white 
  • 125ml SPAR low fat vanilla flavoured yoghurt

Recipe Method

  1. In a microwave-proof bowl, microwave the evaporated milk for +- 2 minutes, to heat to just below boiling point.
  2. Stir in the sugar and cocoa-paste thoroughly. Immediately thereafter, break the chocolate into this mixture, and stir until completely melted in.  Add the soaked gelatine, and stir until also completely melted into the still-hot mixture.
  3. Refrigerate for 20 minutes or until it is just beginning to thicken.
  4. Whisk the egg white in a small bowl, until fairly stiff peaks form. Blend this beaten egg white along with the yoghurt, into the chocolate mixture, and give one brief whisking to ensure a smooth even mixture.
  5. Pour immediately into dainty dessert bowls or ramekins, and refrigerate for at least 40 minutes.

Hints & Tips

Don’t worry about wasting your egg yolk as this can be frozen and simply defrosted when needed in another meal such as omelettes.
Add 10ml SPAR instant coffee granules when dissolving the cocoa powder in boiling water, for a mocha flavour.
Swop the chocolate for another dark chocolate flavour you enjoy, such as peppermint, chilli, blueberry or Wasabi.
