Chickpea Bobotie Recipe

A spicy and substantial vegetarian meal that uses chickpeas in place of mince. A great dish for entertaining.

Recipe Ingredients

  • 30 ml SPAR sunflower or canola oil
  • 1 medium onion, finely chopped
  • 2 large cloves garlic, finely chopped
  • 2 ml ground cumin
  • 1 large Granny Smith apple, peeled and grated
  • 20 ml masala
  • 5 ml ground turmeric
  • 4 slices SPAR brown bread, crusts cut off
  • 125 ml SPAR milk
  • 1 lemon grated rind and juice
  • 20 ml SPAR smooth apricot jam
  • 30 ml golden sultanas
  • 2 cans chickpeas, drained well
  • 10 ml salt
  • 4 small fresh or dry bay leaves

Custard topping

  • 250 ml SPAR milk
  • few drops almond essence - optional
  • 2 large eggs
  • pinch salt

Recipe Method

  1. Preheat oven to 180 º C.
  2. Lightly fry the onion, garlic, cumin, apple, masala and turmeric together in the heated oil.
  3. In a shallow dish, soak the brown bread with the milk and lemon juice for a few minutes and then using a fork, mash together. Add to the fried ingredients along with the lemon rind, jam, sultanas, chickpeas and salt.
  4. Transfer this mixture into a suitable shallow oven dish * and level off the top. Slide in the bay leaves across the top.
  5. In a bowl, lightly beat the custard ingredients together and gently pour it over the chickpea mixture.
  6. Bake immediately for 30-35 minutes until the custard is firmly set.

Hints & Tips

  • Lemon leaves may be substituted for bay leaves if you have a lemon tree in your garden.
  • Recommended accompaniment: Boiled rice with chopped fresh dhania and sprinkling roasted cumin seed added in after cooking. SPAR mango chutney.
