Banana Parfait Recipe

A layered dessert of banana, vanilla cream, caramel and crispy crumb.

Recipe Ingredients

  • 2 big SPAR Freshline bananas
  • 1 tin caramel treat
  • 1 cup cream, whipped

Vanilla Pastry Cream

  • ½ cup SPAR sugar
  • 1/4 cup corn flour
  • 1/2 teaspoon salt
  • 3 cups SPAR full cream milk
  • 2 SPAR eggs
  • 2 tablespoons SPAR butter
  • 1 teaspoon vanilla essence

Crumble

  • 1 ½ cup SPAR coconut biscuits
  • 1/3 cup SPAR butter, melted

Recipe Method

Pastry Cream

  1. In a medium bowl, beat eggs with a fork to combine. Set aside.
  2. Mix sugar, corn flour and salt in a medium pot.
  3. Gradually pour in the milk, while whisking, to make a smooth mixture. 
  4. Cook over a medium heat, stirring, until the mixture thickens and boils. 
  5. Cook and stir for 1 minute.
  6. Pour 4 tablespoons of the hot mixture into the bowl with the eggs and immediately stir well. 
  7. Pour warmed egg mixture into the pot with the rest of the hot milk mixture. 
  8. Return to a slow boil, and cook for 1 minute, stirring constantly.
  9. Remove from the heat and stir in butter and vanilla. 
  10.  Set aside to cool and place in the fridge once cooled. 

Crumble

  1. Crush biscuits in a large Ziploc bag. 
  2. Pour the crumbs, sugar and butter into a bowl and stir until combined. 
  3. Pour into a casserole dish and spread into an even layer.  
  4. Bake at 180C for 10-12 minutes, until light brown.  Allow to cool.

Assemble dessert

  1. Spoon 2 tablespoons crumble into an individual serving glass.
  2. Add a layer of pastry cream into each glass (use a piping bag).
  3. Add slices of banana and next a layer of whipped cream.
  4. Add crumble and a layer of caramel treat..
  5. Repeat layers again.
  6. Top with a slice of fresh banana and serve.
