Potato Wedges with Cheat's Aioli Recipe

Recipe Ingredients
- 6 large SPAR Freshline potatoes, cut into wedges
- 3 tablespoon SPAR olive oil
- Salt and pepper, to taste
For the aioli
- 1 cup SPAR mayonnaise
- 3 tablespoons lemon juice from a SPAR Freshline lemon
- 1 teaspoon lemon rind, fine from a SPAR Freshline lemon
- 1 teaspoon SPAR wholegrain mustard
- 1 SPAR Freshline garlic clove, finely minced
- ½ teaspoon salt
- ½ teaspoon pepper
Recipe Method
- Preheat oven to 180°C.
- Place the potatoes in a baking tray and drizzle with oil.
- Season with salt and pepper. Toss to combine.
- Cook in the oven for +- 35 minute or until the wedges are golden brown
- For the aioli: Place the mayonnaise, lemon juice, rind, mustard, garlic, salt and pepper into a bowl and mix well.
- Place the wedges onto a platter with a bowl of aioli and garnish with parsley.
