Office Lunch Boxes Recipe

Four ideas to use simple ingredients and leftovers to make interesting and healthy work lunchboxes.

Recipe Ingredients

Burger Box

  • About 1 cup left over savoury mince
  • Handful SPAR freshline mixed lettuce leaves
  • About 4 slices SPAR Signature Selection emmental cheese
  • About 2 Tbsp (30ml) spicy mayo (keep in smaller container until serving)
  • ½ punnet (125g) SPAR freshline cherry tomatoes, halved
 

Chicken & Pasta Box

  • 1-2 left over chicken breast, sliced or shredded
  • 1-2 cups cooked fusilli pasta
  • About 2 Tbsp (30ml) left over chimichurri (see recipe here)
  • ½ punnet SPAR freshline cherry tomatoes, halves and quarters
  • 1 disc SPAR feta cheese, cubed

Dressing (blitz ingredients together)

  • About ½ cup leftover whipped feta (see recipe here)
  • Handful fresh herbs, we used dill and basil
 

Halloumi & Falafel Box

  • Glug SPAR olive oil
  • 1 tub halloumi cheese fingers, fried till golden brown
  • ½ cup (125ml) cooked long grain rice (leftovers work well too)
  • ½ cup (125ml) cooked brown rice (leftovers work well too)
  • ½ can lentils, drained
  • Salt and milled pepper
  • About 4-6 cooked falafel balls

Onion & tomato salsa (mix together)

  • ½ SPAR freshline onion, chopped
  • 1 SPAR freshline tomato, chopped
  • 2 Tbsp white wine vinegar
  • 1 tsp (5ml) sugar
  • Salt and milled pepper
  • Handful chopped coriander
 

Steak Noodle Box

  • 1 packet instant noodles, cooked to package instructions without the spice mix
  • 1 SPAR plankie steak, cooked to your liking and thinly sliced
  • 1 small carrot, julienned
  • 2-3 snacking cucumber, cut into chunks

For serving

  • Pickled onions
  • Sesame seeds
  • SPAR Signature Selection chilli crisp

Recipe Method

1. Place ingredients into your work lunch box
2. Keep dressings and serving ingredients in a seperate small container
3. Combine all elements of your delicious work lunch together when you are ready to eat it.
