Nectarine Halloumi and Chickpea Salad Recipe

Nectarines pair so well with the salty flavour of halloumi and the chickpeas provide extra crunch and protein.

Recipe Ingredients

  • 1 x 400g tin chickpeas, drained
  • 3 tablespoons SPAR olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon SPAR vinegar
  • 1 teaspoon SPAR Freshline parsley, chopped
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • Salt and Pepper, to taste
  • 2 SPAR Freshline nectarines, cut into wedges
  • 6 slices halloumi
  • 1 cup SPAR Freshline rocket
  • 400g SPAR Freshline cherry tomatoes, halved
  • 1/2 cup SPAR Freshline basil

Recipe Method

  1. In a bowl mix together chickpeas, olive oil, lemon juice, vinegar, parsley, paprika, garlic powder, salt, and pepper. Set aside.
  2. Heat a pan over medium-high heat and add a drizzle of olive oil.
  3. Place the nectarine and halloumi slices into the pan and grill them until golden, 2-3 minutes on each side.
  4. Place the rocket onto a salad platter.
  5. Add the chickpeas mix, nectarine, halloumi, and tomatoes.
  6. Top with cracked black pepper, extra salt, and fresh basil
