Nectarine Halloumi and Chickpea Salad Recipe
Nectarines pair so well with the salty flavour of halloumi and the chickpeas provide extra crunch and protein.
Recipe Ingredients
- 1 x 400g tin chickpeas, drained
- 3 tablespoons SPAR olive oil
- 1 tablespoon lemon juice
- 1 tablespoon SPAR vinegar
- 1 teaspoon SPAR Freshline parsley, chopped
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- Salt and Pepper, to taste
- 2 SPAR Freshline nectarines, cut into wedges
- 6 slices halloumi
- 1 cup SPAR Freshline rocket
- 400g SPAR Freshline cherry tomatoes, halved
- 1/2 cup SPAR Freshline basil
Recipe Method
- In a bowl mix together chickpeas, olive oil, lemon juice, vinegar, parsley, paprika, garlic powder, salt, and pepper. Set aside.
- Heat a pan over medium-high heat and add a drizzle of olive oil.
- Place the nectarine and halloumi slices into the pan and grill them until golden, 2-3 minutes on each side.
- Place the rocket onto a salad platter.
- Add the chickpeas mix, nectarine, halloumi, and tomatoes.
- Top with cracked black pepper, extra salt, and fresh basil
