Lettuce Cups Recipe

A colourful vegan dish that can be turned into a banting meal with some sliced roast chicken.

Recipe Ingredients

  • 1 cup SPAR Freshline baby cabbage, thinly sliced
  • 1 large SPAR Freshline spring onion, chopped 
  • 1 SPAR Freshline cucumber, julienne 
  • 1 SPAR Freshline large carrot, julienne
  • 1 SPAR Freshline Red pepper, julienne
  • 1 SPAR Freshline Yellow pepper, julienne
  • 1 teaspoon sesame oil
  • 1 tablespoon hoisin sauce
  • 2 tablespoon SPAR Freshline coriander, chopped
  • 3 teaspoon sesame seeds, lightly roasted
  • 1 teaspoon SPAR soy sauce
  • 1 teaspoon rice wine vinegar
  • ½ teaspoon SPAR white sugar
  • 8 SPAR Freshline butter lettuce leaves, washed 
  • 1 SPAR Freshline avocado, thinly sliced
  • Optional: SPAR Freshline sliced chilli
  • Optional: sliced roasted chicken

Recipe Method

  1. In a medium sized mixing bowl add the cabbage, spring onion, cucumber, carrots and peppers.
  2. In a separate bowl mix together the sesame oil, hoisin sauce, coriander, sesame seeds, soy sauce and vinegar.
  3. Pour this mixture over the vegetables and mix well.
  4. Spoon a generous amount of mixture into the lettuce leaves.
  5. Add avocado slices and some extra herb garnish.
  6. Optional: add sliced chicken and some fresh sliced chilli for a bite.
