Lamb Platter Recipe
Tender slices of deboned lamb adorned with sundried tomatoes, rocket and feta and drizzled with olive oil for a Greek style feast.
Recipe Ingredients
- 1 SPAR Tender & Tasty deboned leg of lamb
- 200g SPAR plain feta
- About 80-100g sundried tomatoes in oil
- 1-2 packets SPAR freshline wild rocket
- SPAR olive oil
Recipe Method
- Preheat oven to 180°C.
- Remove lamb from packaging and roast on a lined baking tray for 45 minutes to an hour until well done.
- Allow to rest for at least 15 minutes before carving.
- Arrange lamb slices onto a large platter along with feta, sundried tomatoes and rocket.
- Season well and drizzle with olive oil before serving.
