Lamb Chops with Pea Pesto Recipe

Lamb shoulder chops seasoned with rosemary and garlic and served with a herby pea pesto.

Recipe Ingredients

  • 2 SPAR freshline lemons
  • ¼ cup of SPAR olive oil
  • 4 cloves of SPAR freshline garlic, crushed
  • 2 sprigs SPAR freshline rosemary
  • Big pinch each of sea salt and ground black pepper
  • Big pinch of dried red chilli flakes (optional)
  • 1 fresh bay leaf, crushed (optional)
  • 2 packets Your Butcher By SPAR Lamb Shoulder Chops
 

Pea Pesto
  • 1½ cups SPAR Frozen Peas, defrosted
  • 1/3 cup SPAR olive oil
  • 1 clove of SPAR freshline garlic
  • Juice and zest of 1 SPAR freshline lemon
  • Small handful of SPAR freshline mint or basil

Recipe Method

  1. Zest the lemons and squeeze out all the juice into a bowl.
  2. Mix in the oil, garlic, seasoning, herbs and chili flakes.
  3. Arrange the lamb chops in a glass or ceramic container and pour the marinade over.
  4. Leave to marinate for up to 2 hours before braaiing over hot coals until done to your liking.
  5. To make the pea pesto, blitz the peas, olive oil, garlic, herbs, lemon juice and zest together until chunky. Season to taste, loosening the mixture with a little more olive oil if needed.
  6. Serve the lamb chops with the pesto on the side.
