Leftover Love, Gammon Style Recipe

Use up leftover gammon and potatoes to make a delicious tart using SPAR ready made pastry.

Recipe Ingredients

  • 400g of SPAR Bakery Shortcrust Pastry, defrosted
  • 2 Tbsp (30ml) SPAR butter
  • 1 large SPAR freshline onion, thinly sliced
  • 2 cups (175g) SPAR freshline Mixed Chopped Mushrooms
  • 1½ cups (170g) leftover SPAR Tender & Tasty Gammon, shredded
  • 1 cup (155g) leftover SPAR freshline baby potatoes, smashed

Filling

  • 4 SPAR eggs
  • 1 cup (250ml) SPAR cream
  • 1 cup (250ml) SPAR milk
  • 100g SPAR feta
  • 50g SPAR cheddar cheese
  • Seasoning

Recipe Method

  1. Roll out the pastry on a lightly floured surface.
  2. Gently line a greased tart tin with the pastry and trim off the edges.
  3. Prick the base all over with a fork and chill in the freezer for at least 30 minutes to allow the pastry to rest.
  4. Place a square of baking paper into the tin and pour in 2 cups of uncooked rice.
  5. Blind bake the pastry for 10 – 15  mins at  200ºC, remove the paper and rice and leave to cool.
  6. Heat the butter in a pan and sauté the onions over a low heat for 8 minutes or until soft and caramelised.
  7. Arrange the onions, shredded gammon, baby potatoes, onions and mushrooms on top of the pastry.
  8. Whisk the filling ingredients together and season well.
  9. Gently pour into the tart shell and bake in a 180º C oven for 30 minutes or until golden brown and set.
