Leftover Love, Gammon Style Recipe
Use up leftover gammon and potatoes to make a delicious tart using SPAR ready made pastry.

Recipe Ingredients
- 400g of SPAR Bakery Shortcrust Pastry, defrosted
- 2 Tbsp (30ml) SPAR butter
- 1 large SPAR freshline onion, thinly sliced
- 2 cups (175g) SPAR freshline Mixed Chopped Mushrooms
- 1½ cups (170g) leftover SPAR Tender & Tasty Gammon, shredded
- 1 cup (155g) leftover SPAR freshline baby potatoes, smashed
Filling
- 4 SPAR eggs
- 1 cup (250ml) SPAR cream
- 1 cup (250ml) SPAR milk
- 100g SPAR feta
- 50g SPAR cheddar cheese
- Seasoning
Recipe Method
- Roll out the pastry on a lightly floured surface.
- Gently line a greased tart tin with the pastry and trim off the edges.
- Prick the base all over with a fork and chill in the freezer for at least 30 minutes to allow the pastry to rest.
- Place a square of baking paper into the tin and pour in 2 cups of uncooked rice.
- Blind bake the pastry for 10 – 15 mins at 200ºC, remove the paper and rice and leave to cool.
- Heat the butter in a pan and sauté the onions over a low heat for 8 minutes or until soft and caramelised.
- Arrange the onions, shredded gammon, baby potatoes, onions and mushrooms on top of the pastry.
- Whisk the filling ingredients together and season well.
- Gently pour into the tart shell and bake in a 180º C oven for 30 minutes or until golden brown and set.
