Fruity Muffin Bake Recipe

Stale muffins can be repurposed into an orange bread pudding with a zesty sauce.

Recipe Ingredients

  • 6 SPAR Freshline muffins, bran (or any other flavour you prefer)
  • 6 SPAR eggs
  • 270ml SPAR milk
  • 1 tsp vanilla essence
  • 1/2 teaspoon cinnamon
  • 1 teaspoon orange zest
  • 2 SPAR Freshline oranges, sliced

Recipe Method

  1. Pre-heat the oven to 180°c.
  2. Slice the muffins into 1 cm slices and arrange them into a well-greased baking dish and set aside.
  3. In a large bowl add eggs, milk, cinnamon and vanilla and whisk.
  4. Add the orange slices and zest. Mix gently.
  5. Pour the egg mixture over the muffins, then press the muffins down to make sure they are fully coated.
  6. Place in the oven and cook for +- 20 to 25 minutes, until the top is golden brown and the bake is set.
  7. Dust with icing sugar and serve warm.
