Eggstravagant Morning Wraps Recipe

Baked egg and spinach rolls stuffed with crème fraîche, cheese and lettuce.

Recipe Ingredients

  • 6 XL SPAR eggs
  • ½ cup (125ml) SPAR milk
  • ½ cup (125ml) SPAR buttermilk
  • ¼ cup (60ml) SPAR flour
  • ½ cup (125ml) SPAR freshline spinach, finely chopped
  • ¼ cup (60ml) soft crème fraîche
  • ½ cup (125ml) SPAR mayonnaise
  • ½ cup (62g) SPAR cheese, grated
  • 1 cup SPAR freshline lettuce, shredded
  • SPAR sweet chilli sauce (optional)

Recipe Method

  1. Whisk the eggs, milk, buttermilk, flour and seasoning together and add the spinach.
  2. Pour onto a baking tray lined with greased baking paper.
  3. Bake in an 180ºC oven for 10 minutes or until cooked through.
  4. Gently tip onto a clean piece of baking paper and remove the used paper.
  5. Mix the crème fraîche, mayonnaise and grated cheese together and spread over the egg.
  6. Scatter the lettuce, drizzle the sweet chilli sauce and roll up tightly.
  7. Discard the baking paper and wrap the roll in cling wrap to set in the fridge.
  8. Cut into thick or thin slices and serve.
