Croissant Berry Bake Recipe

An easy but impressive dessert that takes a traditional bread and butter pudding to the next level.

Recipe Ingredients

  • 10 Medium SPAR Freshline croissants, cut into chucks 
  • 250g SPAR full fat cream cheese
  • 2 tablespoon SPAR icing sugar 
  • 2 cups SPAR milk 
  • 6 large SPAR eggs
  • 1 teaspoon vanilla essence
  • ¼ cup SPAR brown sugar, plus 1 extra tablespoon 
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg 
  • ¼ tsp salt 
  • 2 cups SPAR Freshline strawberries, diced 
  • 1 cup SPAR Freshline blueberries
  • 60g cold SPAR butter, thinly sliced 

Recipe Method

  1. Butter a large baking dish. Set aside. 
  2. In a medium sized bowl, whip the cream cheese until soft and fluffy
  3. Stir in the icing sugar and set aside 
  4. In a large bowl, whisk together milk, eggs, vanilla, brown sugar, cinnamon, nutmeg and salt.
  5. Dip half the croissant chunks into the egg mixture until fully coated. 
  6. Arrange the dipped croissants into the prepared dish making sure to overlap.
  7. Dollop all the cream cheese over the first layer of croissants
  8. Spread ¾ of the strawberries and blueberries.
  9. Dip the remaining pieces in the egg mixture and arrange over the berries 
  10. Pour remaining egg mixture over the croissants and gently pressing to absorb.
  11. Sprinkle the remaining berries on top.
  12. Cover the dish and refrigerate for at least an hour.
  13. Preheat oven to 190°c.
  14. Lay the thinly sliced butter over the top of the croissants and bake for +- 40 minutes or until golden and crisp.
  15. Take out the oven and let cool for 5-10 minutes before dusting lightly with icing sugar and extra fresh berries.
