Christmas Pudding Ice Cream Recipe
Combine a traditional Christmas pudding with creamy ice cream and some fresh berries and you have a dessert that's perfect for the South African festive season.

Recipe Ingredients
- 1 x 400 g SPAR Freshline Christmas Fruit Pudding
- 1 litre SPAR Vanilla Ice Cream
- 400 g SPAR Freshline Raspberries
Recipe Method
- Crumble Christmas cake into fine pieces with your hands, set aside. (You can also put the cake in a food processor.)
- Place ice cream in mixing bowl and soften with wooden spoon but do not let it melt completely (it should have the same texture as whipped cream).
- Add crumbs and ¾ of the berries. Mix through.
- Spoon mixture into Bundt pan with a volume of 2 litres and freeze overnight.
- to serve, immerse pan in boiling water for a few seconds and turn out onto serving platter.
- Scatter remaining berries on top and serve.
