Christmas Pudding Ice Cream Recipe

Combine a traditional Christmas pudding with creamy ice cream and some fresh berries and you have a dessert that's perfect for the South African festive season.

Recipe Ingredients

  • 1 x 400 g SPAR Freshline Christmas Fruit Pudding 
  • 1 litre SPAR Vanilla Ice Cream 
  • 400 g SPAR Freshline Raspberries

Recipe Method

  1. ​Crumble Christmas cake into fine pieces with your hands, set aside. (You can also put the cake in a food processor.) 
  2. Place ice cream in mixing bowl and soften with wooden spoon but do not let it melt completely (it should have the same texture as whipped cream). 
  3. Add crumbs and ¾ of the berries. Mix through. 
  4. Spoon mixture into Bundt pan with a volume of 2 litres and freeze overnight. 
  5. to serve, immerse pan in boiling water for a few seconds and turn out onto serving platter. 
  6. Scatter remaining berries on top and serve.
