Soulful Chicken Noodle Broth Recipe

Just the thing to ward off the winter germs. A nourishing bowl of soup, full of flavour and goodness.

Recipe Ingredients

  • 2 Tbsp (30ml) SPAR olive oil
  • Your Butcher by SPAR Whole Chicken
  • 1 SPAR Freshline onion, diced
  • 2 SPAR Freshline leeks, cut into rounds
  • 1 stalk SPAR Freshline celery, chopped
  • 2 SPAR Freshline garlic, finely crushed
  • 2 SPAR Freshline carrots, peeled and cut into rounds
  • 2 bay leaves
  • 1 cup (250ml) SPAR chicken stock
  • 2 x 70g SPAR Instant Noodles Chicken Flavour
  • Juice of 1 SPAR Freshline lemon
  • ½ punnet of SPAR Freshline parsley, chopped

Recipe Method

  1. Heat the oil in a large heavy based pot over a medium heat.
  2. Brown the chicken on both sides and remove.
  3. Add the onions, leeks, celery and garlic and sauté for 8 minutes or until soft and translucent.
  4. Add the chicken, carrots, bay leaves, and stock into the pot.
  5. Mix the Instant Noodles Chicken flavouring sachets with 350ml hot water and add to the pot.
  6. Cover with a lid, bring to the boil and then reduce to a gentle simmer.
  7. Poach the chicken for 1 hour or until soft and falling off the bone, adding a little hot water if necessary.
  8. Carefully take the chicken out and discard the skin and bones and return the meat to the pot.
  9. Add the noodles and heat through.
  10. Add the parsley, squeeze in the lemon juice, and adjust the seasoning to taste.
